Tomatoes are in season. Did you know you can choose from over 10,000 kinds?
The photo above is of five kinds gathered from one of our patient's gardens. From largest to smallest they are Amana (the golden ones), Roma (ripe red and unripe green), cherry, chocolate cherry, and currant (the tiny ones).
Three Ways to Eat Tomatoes:
- You can enjoy them raw. Some like to slice them and add salt when they eat them, but others just go for it like they were apples.
- You can eat them in or as a salad. Simply slice or dice and add a dressing like creamy balsamic vinaigrette dressing.
- You can sauté them in a pan for use as a pasta sauce, soup (taco soup is a local favorite), or puree. Just wash and slice the tomatoes in half. Spray a pan with a light coat of cooking oil. Heat the pan to medium high heat. Add tomatoes and salt and pepper and stir often until all the tomatoes, even the green ones, are tender. You can use them immediately. You can puree them to use as a juice or ketchup base. Or you can let them cool in the pan and then pour them into a large freezer bag and freeze until you are ready to use them.

Tomatoes can help build the immune system because they are rich in Vitamin C and antioxidants such as beta carotene and lycopene.
